Bunum Wo is a washed Arabica coffee from Papua New Guinea, known for its rigorous wet processing that delivers spectacular results. Quality control starts in the field, with hand-picked cherries checked for uniformity, ensuring they are red and fully ripe for the perfect sugar and acid balance. The cherries are pulped on the day of picking and then fermented for three days, washed every 24 hours. Unlike most coffees, Bunum Wo undergoes total immersion in water for a full day, enhancing its quality.
The beans are then conditioned for three weeks through hulling, grading, color sorting, and hand sorting. This meticulous process, combined with strict quality control before packing, produces one of Papua New Guinea's finest coffees.
