A fifth-generation coffee farmer, Nelson Raul Amador started De La Finca Coffee Importers in 2013 with the intention of supporting his family and other small coffee producers from his home country of Honduras. In an effort to expand their expertise in Honduran coffees, De La Finca took on the 9-hectare farm in Marcala, La Paz. This area is widely known for being the hub of specialty coffee in Honduras, and a farm in the area opens both operations and insight in a strategic location in the coffee community of their home country.

They experiment with new processes and production methods, as the coffee world is ever-changing and new methods leading to different results are always arising. The property in La Paz gives De La Finca room for research and experimentation without tampering with their own family’s production. They bought this property as an experimental specialty farm to be separate from our own family farms and experiment with different production and processing methods.

The coffee Honest is getting from De La Finca undergoes a newer processing method known as the anaerobic honey process, one that involves a great deal of additional time and attention. Those overseeing the process are charged with storing the coffee in sealed containers filled with CO2 in order to increase the pressure in the tanks, while also releasing oxygen and maintaining a stable pressure throughout. The aim of this process is to use the pressure to squeeze the contents that remain on the coffee seed to get more flavor in the coffee seed. Being honey-processed means a certain amount of the mucilage from the coffee cherry is left on during the process, contributing to even more complexity and flavor in the cup.
